Hand-sharpened for excellent sharpness. It's been professionally sharpened, so it cuts better than new! (90% of new knives sold are machine-sharpened. They are not professionally sharpened to prevent blade chipping during shipping or transport.) The hand-sharpening process is as follows: 1000 grit → 6000 grit Since it's made of steel, the sharpness lasts a long time, and it can be easily restored by sharpening.
