We recommend purchasing early. [Product Description] A Chinese cleaver, often associated with its large rectangular shape and sharp cutting edge... I only list items that I have personally used and found to be truly excellent. However, I have received many inquiries asking Don't you have a Chinese cleaver?, so I decided to stock a small quantity and try it out myself. The first thing I noticed was its substantial weight. This product weighs approximately 340 grams, which is average for a Chinese cleaver, but those holding it for the first time will likely feel it's heavy! (especially when compared to the 8-inch chef's knife released at the same time...). Chinese cleavers are suitable for all kinds of ingredients such as meat, fish, vegetables, and fruits. Once you get used to the weight, it's said that you can prepare most Chinese dishes with just this one knife, without needing to switch to others. When I actually used it, the combination of its weight and sharp blade made it perfect for cutting chicken thighs for fried chicken, as well as for slicing napa cabbage and pumpkin! The weight means you don't need to exert much force when cutting ingredients; you can simply let your body weight do the work and slice through smoothly ? With a blade length of 18cm and a total length of 32cm, this type with a slightly curved blade tip is called a cai dao (vegetable knife) and is perfect for home use. It's a double-bevel type that can be used for various cooking tasks, and you can also use commercially available sharpeners. It's a great choice for your first Chinese cleaver. The material used is high-grade stainless steel (molybdenum-vanadium steel, also used in surgical scalpels), which offers both sharpness and long-lasting edge retention, making it a product that even professional chefs will be fully satisfied with. It's also resistant to rust, so simply wiping it with a damp cloth is sufficient. By welding the bolster and the blade, water and food juices cannot seep in, allowing for constant cleanliness. The handle, made of rubber with a beautiful wood grain pattern applied through heat vapor deposition, is non-slip and fits comfortably in your hand, making it very easy to use and not cold even in winter. In addition to its excellent sharpness, the blade is finished with a Damascus pattern using laser sanding, allowing you to enjoy its beautiful appearance as well.
