1. This is genuine French Jerusalem artichoke. We offer it processed into powder and other forms. 2. The Jerusalem artichoke at our shop is of the same strain as the one researched and published by Ibaraki University in a monthly magazine. Its energy content is 187 kcal per 100g, and inulin content is 57.82g. Reliable sources online show almost identical figures. This same level of French Jerusalem artichoke, even at a higher price, has exactly the same nutritional components (Important Point 1 for choosing Jerusalem artichoke), so our shop's products are a great value. 3. It is richer in nutrients than white Jerusalem artichoke, with abundant polyphenols that are excellent for antioxidant and anti-glycation effects. According to research by Ibaraki University, anti-tumor activity has been found in the parts where multiple unsaturated fatty acids such as linoleic acid and oleic acid are mixed. * The research findings of Ibaraki University are published in the monthly magazines Takarajima (Takarajima-sha) and Hatsuatsu Genki (Geibun-sha). 4. Jerusalem artichoke fields are cultivated on a 3-year cycle, avoiding continuous cropping. 5. The terraced fields on the mountainside, which receive ample sunlight until sunset, are south-facing with good sun exposure and long daylight hours. Furthermore, Jerusalem artichoke grown in clay soil is firm and compact. 6. No pesticides or chemical fertilizers are used, even during fallow periods. 7. We are also particular about our cultivation methods, resulting in Jerusalem artichoke that is deep purple in color and large in size when harvested (Important Point 2 for choosing Jerusalem artichoke). 8. Purple Jerusalem artichoke is a hybrid cross between the original species of purple Jerusalem artichoke (red-purple Jerusalem artichoke) and white Jerusalem artichoke. Depending on the cultivation method, white Jerusalem artichoke may be mixed in. * Our shop has established cultivation methods, so white Jerusalem artichoke is not produced (Important Point 3 for choosing Jerusalem artichoke). 9. This is 100% pure powder made only from the tubers of the Jerusalem artichoke (the ginger-like part). 10. No coloring agents, fragrances, additives, or preservatives are added. * We offer powder in 100g, 200g, 300g, and 500g sizes, including for special orders.
