Seki Kanetsugu 100th Anniversary Special Kiritsuke Santoku Knife 180mm Damascus Paulownia Wood Box - All-Purpose, Meat, Vegetables, Stylish Kitchenware, Sharp, New Life Gift Received on May 10, 2026, but I am listing it as I have no plans to use it. It is brand new and unused; the box was only opened for product photography. This is a 100th-anniversary commemorative model from Seki Kanetsugu, a blade maker in Seki City, Gifu Prefecture. It's a top-quality knife and comes with a stylish wooden sheath, so please consider it. As it is a Santoku knife, it is versatile and highly recommended. Zuiun (瑞雲) means auspicious clouds appearing as a sign of good fortune in Buddhism, making it a fitting name for this 100th-anniversary model knife, and it is also perfect as a gift. Special Kiritsuke Knife This Kiritsuke knife is a hybrid of an Usuba (thin-bladed) knife and a Yanagiba (sushi) knife, finished with a double bevel instead of the traditional single bevel. The pointed tip is sword-shaped, making it suitable for intricate cuts and dishes that utilize the tip of the knife. Blade Material Top-grade cutlery steel SPG2 Damascus Steel It uses 63 layers of Damascus steel with a core material of the hard-to-obtain, top-grade cutlery steel SPG2 (Super Gold 2). The core material, SPG2 (also known as Powdered Stainless High-Speed Steel), excels in all four essential qualities of cutlery: high hardness, high toughness, wear resistance, and corrosion resistance. Sharpness The superior blade steel is finished with a Hagane (convex grind) shape, similar to a Japanese sword. It is also easy to re-sharpen. Heat Treatment A special sub-zero treatment, involving cooling below -70°C after quenching, is applied to impart high hardness and toughness, achieving a knife that is unbreakable, unbendable, and cuts well.
