(Sowing period): Mid-September to Early November

    (Harvest period): Around March

Why not try growing them yourself?

    [Features]
Aso Takana is a rare variety of mustard green characterized by its thin stems and crisp texture.
Not only the stems but also the leaves are delicious.

Since it is rarely sold in stores, I grow it myself and collect the seeds.
We recommend storing the seeds in a cool, dark place or in the refrigerator until sowing time.

Harvesting is traditionally done using a method called Takana-ori (mustard green folding). It is a manual process where the tender parts of the stems are individually hand-folded and harvested without the use of machinery.
Harvesting is done by directly checking the best parts that can only be understood by human senses.
This harvesting is often seen in early spring and is called Takana-ori in Aso.

    [After Harvesting]
Because the stems are thin, there is no need to sun-dry them before pickling.
They are salted and pickled on the same day they are harvested from the field.
[If you don't have a barrel, you can easily do it by putting the takana and salt in a ziplock bag, placing a heavy object like a plastic bottle on top, and refrigerating it.]
Add chopped chili peppers to your liking.
It will be ready to eat in about 4 to 10 days when moisture appears.
If it is too salty to eat as is, rinsing it with water will make it more palatable.
While it's delicious as a pickle, it's even tastier when mixed into stir-fries, fried rice, ramen, pasta, or other stir-fried dishes.
    It can also be frozen.

    ?? [Caution]
The seeds being sold are carefully collected, but as we are not a seed store, there is a possibility of small husks being included. We appreciate your understanding.

We also have rice and other items for sale, so please take a look! (o^^o)
